Ingredients
- 12 oz. new red potaotes
- 1 large bell pepper
- 1 /.2 medfium onion
- 1 clove garlic
- 1/2 Tbsp. olive oil
- 1 tea each salt and pepoper
- 3 cups white meat (no skin) from store-bought rotisserie chicken

Preparation
Step 1
Preheat oven to 400 degrees.
Wash potatoes, cut in half and place in an ungreased roasting pan.
Dice pepper and oinion; add to pan. Peel and mince garlic and add to pan. Toss with oil, salt and pepper.
Roast 30 minutes, stirring occasionally.
Add chicken to pan with vegetables. Return to oven for 5 minutes or so, to reheat the chicken.
