Ingredients
- 2 Tbsp. vegetable oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 sweet potatoes, peeled and cut into 1-inch cubes
- 1 cup rice
- 8 cups vegetable broth
- 1/3 cup peanut butter (smooth or crunchy)
- 1 (15 ounces) can chickpeas, rinsed and drained
- 3 cups salsa
- 1 cup diced zucchini
- 1/2 tsp. cumin
- 1 tsp. dried thyme
- Salt and freshly ground black pepper

Preparation
Step 1
Heat the oil in a large stockpot over medium heat. Add the onion, garlic and sweet potatoes and saute 7 to 10 minutes, until the sweet potatoes are tender.
Add the rice and vegetable broth to the pot. Bring to a boil; reduce heat, and simmer covered, 20 to 30 minutes, until the rice is tender.
Add the peanut butter, chickpeas, salsa, zucchini, cumin, thyme, and salt and pepper; cook over low heat until the zucchini is soft.
