  • 1/4 cup orange juice
  • 1/2 cup maple syrup
  • 1 cup 35 % cream
  • 1 tbsp vanilla extract

Step 1

In small saucepan, sprinkle gelatin over orange juice; let stand until dissolved. Set over low heat; stir until gelatin is completely dissolved. Stir in maple syrup.

Turn into large bowl. Refrigerate, stirring occasionally, until the consistency of raw egg whites. (This will take about 10 to 20 min; watch to ensure that syrup does not overset.)

Meanwhile, whip cream until soft peaks form. Stir in vanilla extract.

Stir 1/4 of cream into maple syrup; fold in remaining cream. Spoon into parfait glasses; chill until firm.
