Ingredients

  • 3 small summer squash (yellow and zucchini), halved lengthwise
  • 8 oz green beans, trimmed
  • 2 plum toms, halved
  • 3 TBSP evoo
  • s/p
  • 2 TBSP red wine vinegar
  • 2 tsp Dijon mustard
  • 1/4 tsp dried oregano
  • 1 head romaine, torn
  • 1/2 cup fresh basil leaves, torn
  • crumbled feta

Step 1

Heat grill to med-high. In bowl, toss the squash, green beans, toms, 1 TBSP evoo and 1/2 tsp s and p. Grill the veges (squash and tomatoes cut side down first), turning the green beans often and the other veges once until just tender and charred, 3 to 5 mins. Transfer veges onto cutting board. Slice squash 1/4 in thick and cut toms and beans into 1 in pieces. In a large bowl, whisk vinegar, mustard, oregano, remaining evoo and a pinch of s and p. Add the veges, lettuce and basil and toss to coat. Top with feta, of desired.
