Tomato and Mozzarella Skewers with Basil Oil

One cocktail party strategy is sticking to two or three dishes (rather than eight or nine) that look bountiful and feed a crowd. Try tomato skewers (caprese salad on a stick!) piled high on a platter, dressed up with a little basil oil that takes only two minutes to make.

If you're taking these appetizers to a party, put your basil oil in a squeeze bottle and add it right before serving.

Ingredients

  • Bocconcini (bite-sized mozzarella balls)
  • Grape tomatoes
  • Basil leaves, couple of handfuls
  • Olive oil

Preparation

Step 1

On each skewer, put three grape tomatoes and one piece of cheese.

For the basil oil, blend a couple of handfuls of fresh basil leaves in a blender with enough olive oil to make it fluid and creamy.

If transporting this platter to another location for the party, put basil oil in a squeeze bottle and squirt it on once you get there. Done!
