Ingredients

  • Meringue:
  • 2 3/4 cups scalded milk
  • 6 tbsp. cornstarch
  • 1/4 tsp. salt
  • 1/2 cup sugar
  • 1/4 cup cocoa
  • 1/4 cup cold milk
  • 2 egg yolks, beaten
  • 1 tsp. vanilla
  • 2 egg whites, beaten
  • few grains salt
  • 3 tbsp. sugar
  • 2 tsp. cold water

Step 1

Mix cornstarch, salt, sugar and cocoa to smooth paste with cold milk. Add scalded milk and cook over boiling water 20 minutes, stirring constantly until thickened.

Add a little pudding mixture to egg yolks and vanilla and return to pot.

Turn into lightly-greased casserole, 1 1/2 quart size.

Make meringue by adding sugar and water to partially beaten egg whites and salt. Beat until meringue will stand in peaks. Spread meringue lightly on pudding.

Bake at 350 deg. about 15 minutes or until lightly browned.
