Ingredients

  • 3 Boneless Chicken Breasts
  • 1 Tblsp. Cumin
  • 1 can Ro-Tel Tomatoes
  • 1 Tsp. Oregano
  • 1 Onion, chopped
  • 1/2 tsp. Cinnamon
  • 2 Garlic cloves, chopped
  • 1 Tsp. Paprika
  • 1 package Corn Salsa mix (Pic-Sweet)
  • 3 Tblsp. Lime juice
  • 1 Tblsp. Chili Powder
  • 1 Avocado, cubed
  • 2 Tsp. Chicken base
  • Salt and Pepper to taste
  • Cheese and Sour Cream to serve
  • Tortilla Chips, crushed

Preparation

Step 1

In a large pot, place chicken breasts along with all the seasonings, chicken base, lime juice, onion and garlic. Bring to a boil until chicken is tender (about 15 min.). Remove chicken from broth and add tomatoes and corn mix. Bring to a boil again. Add ½ cup tortilla chips to thicken. Chop chicken and add back to pot. Cook 5 additional minutes. To serve, add soup to serving bowl and top with cheese, sour cream avocado and tortilla chips.
