Nori Cracker

Ingredients
- For the nori crackers:
- 5 1/2 oz rice flour
- 1 cup water
- 1/2 oz ground dry nori seaweed
- For the puffed nori crackers:
- 1 1/4 cup 0.4º olive oil
- dry nori crackers (see previous step)
- ground dry nori seaweed
- salt

Preparation
Step 1
Puffed nori crackers:
1. Heat the oil until it is piping hot.
2. Use a slotted spoon to plunge the nori crackers in the oil and when they begin to puff up, drain on a tray lined with kitchen paper.
3. Season with salt and sprinkle with ground dry nori seaweed.
Nori crackers:
1. Mix the flour, water and ground seaweed together. Beat until you get a smooth dough.
2. Place in an icing bag and leave to rest in the fridge for at least 15 minutes.
3. Squeeze a drop of the mixture onto a Silpat liner and spread it out using a spatula.
4. Shape it into a tear, which should be 2¼" long and 1½" wide.
5. Dry in the oven at 400 ºF for 15 seconds. Leave them on top of the oven to continue drying for at least 2 h.
Finishing Touches & Presentation:
1. Arrange the nori crackers in a pile in a bowl.
