- Organic extra virgin olive oil
- 1 organic red bell pepper
- 2 organic eggs
- Pinch of organic Provençal salt blend

Step 1
Preheat oven to 375° F. Drizzle oil in a ceramic baking dish.
Slice top and bottom from pepper. Cut the remaining pepper in half, horizontally, and remove core and seeds.
Place in bottom of baking dish to coat in oil. Flip once to coat other side.
Crack open one egg and pour into a pepper ring. Repeat with other egg.
Sprinkle salt blend on top and bake in oven to desired doneness. For mine to be completely cooked through, it took about 15-20 minutes.
Remove from oven. Using a metal spatula, lift out of baking dish, and arrange on plate.
