EGG*****Naan Egg Sandwich

Ingredients
- 2 PC Naan rounds
- 1 slice PC old cheddar
- 1 egg
- handful of arugula or arugula/spinach mix
- 2 teaspoons EVOO
- small amount of PC Pepperoncini Picante (about 1/4 teaspoon)
- 1/4 lime, juiced
- salt and pepper to taste

Toast Naan rounds lightly, topping one with the cheese slice to melt. (The first time I made this, I fried the breads in a skillet on both sides with a bit of olive oil. While that was very good, the finished product is slippery enough without the extra fat and calories.)
Put a small spoonful (easy does it) of the Pepperoncini in the bottom of a bowl and squeeze in a wedge of lemon or lime. Add a couple of teaspoons of olive oil (leaving a bit to fry the egg) and a pinch of kosher salt and mix together. Add the arugula and toss to coat. Taste and adjust seasoning, adding a pinch of Maldon salt, and set aside to rest while you cook the egg.
Fry the egg in a small amount of olive oil in a non-stick until set. Season with salt and pepper. Flip for just a minute (or not, as that tends to break the yolk).
Place the egg on one of the Naan rounds, top with the arugula salad and the other Naan round, cheese side down. Slice in half and serve.
Alternately, you could serve this open-faced with just one Naan and a knife and fork, although the mess was part of the enjoyment, I think.
