Ingredients

  • 2-3/4 cups all-purpose flour
  • 3/4 cup white sugar
  • 3/4 cup firmly packed brown sugar
  • 1 ts baking powder
  • 1 ts baking soda
  • 1/2 ts salt
  • 2 large eggs,lightly beaten
  • 1-1/2 sticks unsalted butter, melted
  • 3/4 cup buttermilk 2%
  • 1 TB pure maple syrup
  • 1-1/2 ts vanilla
  • 1-1/2 ts pure lemon extract
  • 1 cup frozen, unsweetened blueberries
  • TOPPING
  • 3/4 cup old fashioned or quick cook oats (not instant!)
  • 1/4 cup white sugar
  • 1/4 cup firmly packed brown sugar
  • 4 TB 1/2 stick unsalted butter( melted)

Preparation

Step 1

Preheat oven to 375

Spray the pan
In large bowl whisk flour, white and brown sugars,salt, baking powder and baking soda.
In another bowl combine the eggs , melted butter, buttermilk,vanilla and lemon extracts.

Add to this mixture to the dry ingredients (don't overbeat, needs a few lumps.) Gently fold in the blueberries.

Put into muffin tin. 2 muffin tins needed as this makes 8-9 muffins. Fill fairly full. I mound a bit in the center.

Make topping
In a bowl combine the oatmeal, brown and white sugars. Add melted butter. Mound some on top of each muffin, pressing slightly.
Bake 20-25 minutes. Should be a little crispy around the edges.
