Ingredients

  • 4 oz (125 gm) Parmesan cheese
  • 4 ripe papayas, peaches or nectarines
  • 1/4 cup extra-virgin olive oil
  • 1 tbsp white balsamic or white wine vinegar
  • 2 tsp red wine vinegar
  • 1/2 tsp sea salt
  • 1 1/2 tsp freshly ground pink or black peppercorns
  • 10 cups (300 gm) baby spinach

Preparation

Step 1

Shave the cheese into thin ribbons and set aside. Peel and seed the papayas or other fruit and cut into 1/2 inch cubes. In a large salad bowl, make dressing by combining the oil, vinegars, salt and ground pepper, mixing well with a fork or whisk. Add spinach and toss well to coat.

Add fruit and half the cheese, turning gently to coat. Top with remaining cheese, and add more pepper if desired. Serve at once.
