Ingredients
- 1 TBS O/O
- I large onion, chopped
- 1 clove garlic or more
- 1 14.5 oz can black beans with liquid
- 1 14.5 oz can diced tomatoes
- 1 bunch cilantro (yes, the whole bunch)
- 1/3 cup white wine /optional
- Sour cream and avocado slices for topping
- Salsa for topping

Preparation
Step 1
Put the oil, onion and garlic in a pot over high heat.
Stir a bit while you open the beans and tomatoes.
After 5 minutes, pour in the beans and tomatoes with their liquid, add the wine if using and stir.
Cover and heat until boils. Remove lid and turn down to medium ( the steam will thicken the soup.)
Set timer for 15 minutes and wash the cilantro and chop it.
Put the cilantro in the pot before serving and stir.
Add the toppings and enjoy.
