Melon, Sherry and Passion Fruit Cocktail

Ingredients
- For the sherry and melon juice:
- 1 lb melon
- 1 1/2 cup sherry
- For the passion fruit foam:
- 1 1/4 cup passion fruit juice
- 1 1/2 cup water
- 1 1/2 sheet gelatin (previously rehydrated in cold water)
- 1 ISI foaming canister
- 1 N2O cartridge

Preparation
Step 1
Sherry and melon juice:
1. Peel the melon, cut it into quarters and remove the seeds.
2. Blend the melon quarters in the Thermomix.
3. Once the melon is blended, use the back of a spoon to press it through a sieve and get as much of the pulp as possible.
4. Mix the melon juice with the sherry, cover and keep in the fridge for 2 hours.
Passion fruit foam:
1. Heat 1/4 of the water and dissolve the gelatin in it.
2. Remove from the heat and add the rest of the water and passion fruit juice.
3. Strain and fill the canister using a funnel.
4. Foam and leave to rest in the fridge for 2 hours.
Finishing Touches & Presentation:
1. Fill three-quarters of a 2½-oz glass with the melon and sherry mixture.
2. Top with the passion fruit foam and serve really cold.
