Preparation
Step 1
Crust:
Whisk flour, turmeric, baking powder in a large bowl. Cut butter into small pieces and quickly rub them into the dry ingredients with your fingers until smaller but still visible.
Add oil and toss with a fork to combine.
Whisk water and egg yolk in a small bowl. Add to the flour mixture and stir until the dough begins to come together. Knead in the bowl a few times until it forms a ball. Wrap in plastic and refrigerate for at least 1 hour.
Filling:
Cook ground beef, scallions and Jalapeño in a frying pan over medium heat, breaking up the beef. Stir in breadcrumbs, water, thyme, turmeric and mix well. Let cool.
Preheat oven 400 degrees:
To make patties:
On a floured surface, roll out the dough about 3/8 inch thick. With the top of a medium sized mayonnaise jar cut out circles. Put a tsp of the filling in the middle and fold over the dough to make a half-moon shape and press the edges with a fork to seal.
Place on a non-stick baking sheet and bake the patties until golden. About 20-25 minutes.
