I use the Carroll Shelby Chili kit since it holds the spices that I would use anyway and it is convenient.
Really good on a cold day with a beer. Great football food.

Ingredients

  • Optional toppings:
  • 1 box Carroll Shelby's Chili Kit
  • 1 whole bell pepper- diced
  • 1/2 sweet onion-diced
  • 1 15 oz diced tomatoes
  • 1 8 oz tomato sauce
  • 2 15 oz cans dark kidney beans
  • 2 15 oz cans light kidney beans
  • water to cover
  • 2 lbs stew beef cut into small bite size pieces (can also substitute turkey)
  • Shredded cheddar cheese to sprinkle on top after serving.
  • Dollop Sour cream for each serving
  • Crushed tortilla chips

Preparation

Step 1

In a dutch oven, cook bell pepper, onions and beef until no longer pink.
Throw in all spices from kit, except maize. Stir.
Add diced tomatoes with liquid, all cans of beans undrained. Stir.
Add tomato sauce and add water to cover.
Mix in maize mixture from kit.
Once it boils, lower heat to simmer.
Once chili thickens up you can serve, about 30 minutes. Can let it cook longer on low to integrate the flavors.
Ready to serve in bowls, and can top with chips, cheese and sour cream.
