  • 3 medium Idaho potatoes
  • 3 1/2 cups peanut oil

Peel potatoes and wash, dry, and cut into fries (3" by 1/4"). Heat peanut oil to 450 degrees in wok, and place potatoes in oil. Cook for 5 minutes or until potatoes are glossy on the surface. Remove from oil, drain on paparer towels, and allow to cool. Gently press the moisture from them. Heat oil to 375 degrees, and replace potatoes in the oil. Fry about 5 minutes or until golden brown. Remove from oil, drain on paper towels, and serve immediately. Oil may be saved and reused.
