Ingredients

  • 6 chicken breast halves without skin or bone
  • 1/4 cup flour
  • 1/4 cup butter or margarine
  • 1 tablespoon olive oil
  • 3/4 cup chicken broth
  • 1/3 cup lemon juice (2 lemons)
  • 1 teaspoon lemon peel grated
  • 1/2 teaspoon salt
  • pepper to taste
  • 1 tablespoon butter or margarine
  • 3 tablespoons parsley snipped

Step 1

Pound chicken until thin. Dredge chicken breasts in flour. Heat butter and olive oil together. When foam subsides, cook chicken about 2 minutes per side. Remove chicken and drain on paper towels. Add broth, lemon juice, lemon peel, salt and pepper. Boil about 6 minutes. Add the last tablespoon butter. Add chicken, and spoon sauce over chicken pieces. Heat for about 2 minutes. Serve with parsley sprinkled over the top.
