Ingredients

  • Frosting:
  • 1 box yellow cake mix
  • 1 small box instant vanilla pudding
  • 1 t. baking powder
  • 1 c. oil
  • 4 eggs, beaten
  • 1 t. vanilla
  • 1 10 oz can mandarin orange sections
  • 1 20 oz can crushed pineapple
  • 1 small box instant vanilla pudding
  • 1 9 oz Cool Whip

Step 1

Pout cake mix in a large bowl. Add instant pudding, baking powder, oil and eggs. Beat well together on medium high for two minutes.
Add vanilla flavoring and beat one more minute. Add can mandarin sections plus juice and mix by hand until well blended.
Heat oven to 350 degrees. Spray round cake pans with Pam. Pour mix into cake pans and bake about 20 minutes. Check for doneness with toothpick. Cool in pans on rack for 20 minutes and then remove from pan. Cool on rack while making frosting.

Mix well, crushed pineapple with juice, instant pudding and Cool Whip. Stir until well blended. Spread between layers and around and over the cake. Refrigerate.
