GROUND TURKEY****Dan Dan Noodles

29/03/15-Compilation of a couple of recipes, starting with a recipe at Eating Well for Brothy Chinese Noodles. Good for both although I had a texture issue with the dried Somen noodles cooked right in the broth - I think I'd much prefer fresh Udon, just heated through, in the bowls then topped with the sauce.

Ingredients

  • 2 teaspoons sesame oil, divided
  • 5 - 6 oz. ground turkey
  • 3 scallions, sliced, divided
  • 1 clove garlic, minced
  • 1 teaspoon minced fresh ginger
  • 1 teaspoon hoisin sauce
  • 1 cup reduced-sodium chicken broth (or as needed)
  • 1 cup thinly sliced bok choy
  • 3 ounces dried Somen or Udon noodles or fresh Udon or Meki noodles
  • 1 tablespoon reduced-sodium soy sauce
  • 1 teaspoon rice vinegar
  • 1 small cucumber, sliced into matchsticks, for garnish (optional)
  • Chinese chili oil, to taste

Preparation

Step 1

Heat 1 teaspoon oil in a saucepan over medium heat. Add ground turkey, all but 2 tablespoons of the scallions, the garlic and ginger and cook, stirring and breaking up the turkey, until no longer pink, about 5 minutes. Add the hoisin sauce and saute a minute longer. Transfer to a bowl.

Add 1 cup of broth, bok choy, dried noodles, soy sauce, vinegar and the remaining 1 teaspoon oil to the pan. Bring to a boil over medium-high heat. Cook, stirring occasionally and adding additional chicken broth as needed, until the noodles are tender, 3 to 5 minutes and almost all of the liquid has been absorbed. You want it to be soupy but not like soup. Return the turkey mixture to the pan and stir to combine.

Serve garnished with the reserved 2 tablespoons scallions, fresh cilantro and cucumber (if using). Garnish Dan's with a handful of chopped peanuts.

Put a teaspoon or so of Chinese chili oil in the bottom of my bowl, to serve. (I used about 1/2 teaspoon of the homemade oil the first time - it could take a full teaspoon, I think)
