Ingredients

  • 1 pound ground beef
  • 1 (12 ounce) jar salsa, divided
  • 6 corn or flour tortillas
  • 1 cup refried beans, divided
  • 1 cup sour cream, divided
  • 1 cup shredded Cheddar cheese, divided
  • Shredded lettuce
  • Sliced black olives for garnish

Preparation

Step 1

Brown ground beef and drain off fat. Stir in 1/2 cup salsa to make beef mixture.

Spread 1/4 cup salsa in a 10-inch pie plate. Top with 3 tortillas, overlapping edges. Spread with 1/2 cup beans, half the beef mixture, 1/3 cup sour cream and 1/2 cup cheese. Repeat layers. Microwave on high 5 to 7 minutes, or until heated through.

Garnish with lettuce, remaining sour cream and salsa, and olives, if desired.
Makes 6 servings.
