Ingredients

  • For the biscuits:
  • 2 cups all-purpose flour
  • 4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 4 tablespoons cold unsalted butter, cut into small pieces
  • 1 cup milk
  • 8 to 16 large eggs
  • 8 slices cheddar cheese

Preparation

Step 1

1. Preheat the oven to 425 degrees F. Grease a rimmed baking sheet with cooking spray or butter.

2. In a medium bowl, whisk the flour, baking powder, baking soda and salt. Add the butter. Using a pastry cutter or hands, cut the butter into the dry mixture until it resembles coarse meal. Add the milk and mix until the mixture becomes a wet dough.

3. Turn out onto a floured surface. Pat the dough into a rectangle, about 1/2-inch thick. Cut the dough into 8 squares. Place the pieces on the prepared baking sheet. Bake until lightly brown, about 13 to 15 minutes.

To make a sandwich:

Lightly beat 1 or 2 eggs in a small bowl. Coat a small nonstick pan over medium-high heat with nonstick cooking spray. Cook the egg in a thin layer in the pan. When the edges begin to look firm and dry, turn the egg. Place a slice of cheese over the bottom half of the egg and fold the other half over to encase the cheese. Cook until the cheese begins to melt, about 1 to 2 minutes.


Slice a biscuit in half horizontally. Place the egg and cheese on the bottom half. Cover with the top half. Repeat with the remaining biscuits, egg and cheese.
