Danish Rice Pudding
- 3/4 cup Calrose rice
- 4 cups half and half, or whole milk
- 2 vanilla beans, seeds and pods
- 1 cup heavy cream
- 1 to 2 tablespoons sugar
- Optional: sweetened raspberries
Cook's Essentials Low Pressure Cooker directions:
Cook rice, half and half/milk and vanilla beans for 30 minutes on manual setting, stirring half way through cooking.
Stir in 1/3 cup sugar and cool. Remove vanilla pods and fold in whipped heavy cream sweetened with 1 to 2 tablespoons sugar to taste.
Optional: serve with sweetened raspberries
