Ingredients
- For Bread
- 2 1/2 cups all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 tsps cinnamon
- 4 TBSPs butter, melted and cooled
- 3/4 cup sugar
- 3 eggs, beaten
- 1 cup vanilla Greek yogurt (I used Yoplait 100)
- 2 tsp vanilla extract
- 2 cups apples, peeled and diced (about two small)
- For Topping
- 1 TBSP butter
- 1/4 cup packed light brown sugar
- 1/4 cup quick cooking oats
- 1/2 tsp cinnamon

Preparation
Step 1
Preheat your oven to 350 degrees. Spray the bottom and bottom 1 inch of a 9 inch bread pan with cooking spray.
In a large bowl mix together the flour, salt, cinnamon, baking soda, and baking powder.
In another late bowl mix together the eggs, butter, yogurt, sugar, and vanilla.
Mix the wet ingredients into the dry, being careful not to over-mix. Stir in the diced apples.
Mix the ingredients for the bread topping, the butter, brown sugar, oats, and cinnamon together in a small bowl with a fork and sprinkle over the unbaked bread.
Bake the bread for 60 minutes or until a a toothpick inserted into the middle of the bread comes out with just a few crumbs.
After 10 minutes, remove from the bread pan and set on a cooling rack. Allow to cool completely before wrapping tightly in plastic wrap.
