Green Tomato Raspberry Jam

I used an electric food grinder for the tomatoes instead of shredding them. I drained the excess liquid and then measured the tomatoes until I got 4 cups. Follow the rest of the instructions as directed.

Ingredients

  • 4 cups shredded green tomatoes (with seeds)
  • 4 cups white sugar
  • 1 (6oz) package raspberry flavored gelatin mix

Preparation

Step 1

Combine tomatoes and sugar in a large saucepan and bring to a boil over medium heat. Stir and cook about 10 minutes. Add the gelatin, reduce the heat to low, and simmer for 20 minutes.

Spoon into hot, sterilized jars and seal; or pour into freezer containers and freeze.
