Ingredients
- 1 cup softened butter
- 3/4 cup powdered sugar icing sugar
- 1/4 tsp salt
- 1 egg
- 2 tsp vanilla
- 2 1/4 cups all-purpose flour
- 1 bag white chocolate chips
- 2/3 Cup cookie sprinkles (non-pareils)

Preparation
Step 1
1. Preheat oven to 375*F. Beat butter in a large mixing bowl on medium speed for 30 seconds. Beat in powdered sugar and salt. Beat in egg and vanilla. Beat in as much flour as you can.
2. Put dough into a cookie press fitted with a saw toothed ribbon disk. Press dough in long strips on ungreased cookie sheets. Score strips crosswise to form 1-inch squares.
3. Bake in preheated oven for 6 - 8 minutes. Cut warm cookies along scores lines and cool completely.
4. Microwave white chocolate chips in a microwave safe bowl. Be very careful and only use medium power then stir from time to time until the chocolate is smooth. *It can burn if the power is too high or on for too long* Spread a thin layer of chocolate on the flat side of one cookie then top with another cookie forming a sandwich. Repeat with remaining cookies.
5. Dip the corner of each cookie in the chocolate and then dip into a bowl of sprinkles. Place cookies on wax paper at room temperature or in the refrigerator to set.
