Lobster-Angel Hair Pasta

Ingredients
- 1 can diced tomatoes (15 oz)
- 2 tablespoons diced garlic
- 12 ounces cokked lobster meat
- 3 tablespoons olive oil
- 3/4 cup white wine
- 1/2 cup lobster stock
- 1 pound angel hair pasta
- 1 stick butter
- 1 bunch fresh basil
- 1/4 cup grated Parmesan cheese

Step 1
Preheat a large skillet over medium high heat until the pan is hot. Add the tomato, garlic and olive oil. Saute until the tomatoes are soft, about 3 minutes. Deglaze the pan by adding the white wine and the lobster stock. Set heat to low simmer.
Fill a large pot with water. Bring to a boil. Add the angel hair pasta and stir occasionally for about 4-5 minutes or until the pasta is almost completely cooked. Drain in a colander.
To the skillet, add the butter, salt and pepper. Continue to simmer until heated through.
With tongs or a pasta spoon, transfer the angel hair pasta directly into the skillet with the simmering mixture. Add the lobster pieces and toss with the sauce. Fold in the basil and the cheese.
Serve immediately.
