Ingredients
- Make/mix the marinade/sauce:
- 3 tbspn soy sauce (preferably Datu Puti, in Asian/Fiesta stores)
- 3 tbspn vinegar (preferably Datu Puti, in Asian/Fiesta stores)
- 3 cloves garlic (or more)
- 3 pieces dried bay leaves
- 1/2 tbspn white sugar (the secret ingredient???)
- 1/2 tbspn whole peppercorn
- 2 lbs chicken pieces (your choice)( they used blsl chicken thigh chunks)

Step 1
recipe:
Marinade ~ 2 lbs chicken pieces (your choice)for at least 3 hours or overnight.
Pan fry chicken in very little EVOO (or any oil) until somewhat brown on both sides (not necessarily cooked), about 3-5 mins each side.
Pour 1/2 cup water and the remaining marinade to the chicken, simmer in medium-low heat for 15 mins.
Turn chicken pieces, add diced/sliced potatoes, simmer for another 15 mins.
Serve hot with white rice! :)
