Ingredients
- Custard:
- 1 cup water
- 1/2 cup butter
- 1/2 tsp each salt and sugar
- 1 cup flour
- 4 eggs
- 1 egg white
- 1 egg yolk beated with 1/4 tsp water
- 3 kiwis, peeled and sliced
- 2 cups raspberries or strawberries
- 1 pkg (3 3/4oz) vanillia pudding mix
- 1/8 tsp vanilla
- 1 1/2 cups whipping cream
Preparation
Step 1
In a saucepan, combine butter, salt and sugar. Bring to a boil.
Add flour all at once. Mix well. Cook over low heat, beating briskly, until mixture is thoroughly combined and easily forms into a ball.
Remove from heat. Beat in eggs, one at a time. Add unbeaten egg white. Beat until completely mixed. Cool.
Using a spoon, drop dough onto lightly greased baking sheet. Brush tops of puffs with beaten egg yolk and water mixture.
Bake at 400 for 20 min or until golden brown. Cool But tops off puffs.
To assemble, place spoonful of custard in each puff. Top with kiwi slices and berries. Continue layering custard and fruit until filling is just beyond top of puff. Top can be replaced if desired. Garnish with reserved spoonful of whipped cream, kiwi slice and a berry if you wish.
Make custard according to diretions of package of pudding mix. Cool. Add 1/8 tsp vanilla to 1 1/2 cups whipping cream. Whip until soft peaks form.
Gently fold 1 cup of whiped cream into pudding. Reserve remaining whipped cream for garnish.
