Chipotle Chicken Stew

Really nice, but it's hard to get chipotle peppers in the UK so I will have to import some more from the US before I make this again.

Ingredients
- 800 g / 1.5 lb boneless, skinless chicken breast, cubed
- 1 can (15 oz) pinto beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (14 oz) chopped tomatoes
- 1 1/2 cups chicken broth
- 1/2 cup orange juice
- 1 medium onion, diced
- 3 small chipotle peppers in adobo sauce, minced
- 1 teaspoon ground cumin
- 1 bay leaf

Preparation
Step 1
Combine all ingredients in a slow cooker. Cover, cook on LOW 7 to 8 hours or on HIGH 3 to 4 hours. Remove bay leaf before serving. Serve with non-fat plain yogurt.
