Ingredients
- 1/2 c. flour
- 1/2 c. whole wheat flour
- 2 tsp sugar
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1 large egg, separated
- 3/4 cup buttermilk
- 1/4 cup milk, plus 1 Tbsp
- 2 Tbsp butter, melted

Step 1
Mix flour, sugar, salt, baking powder, and baking soda in a medium bowl. Pour buttermilk and 1/4 cup milk into a 2-cup liquid measuring cup. Whisk in egg white. Mix yolk with butter, then add to milk mixture. Dump wet ingredients into dry ingredients all at once, whisk until just mixed.
Meanwhile, heat a griddle or large skillet over strong medium heat. Generously brush pan with oil. When water splashed on surface sizzles, pour batter, about 1/4 cup at a time, onto griddle, making sure not be overcrowd. When pancake bottoms are brown and top surfaces start to bubble, 2 to 3 minutes, flip pancakes and cook until browned, 1 to 2 minutes more. Serve hot.
