Ingredients

  • 1/2 cup whole-wheat berries (whole-grain wheat) or whole-wheat flour
  • 2/3 cup oats or oat flour
  • 1/4 cup corn kernels or cornmeal
  • 1/4 cup rice or rice flour
  • 3/4 cup all-purpose flour
  • 4 tsp baking powder
  • 2 large eggs
  • 2 cups buttermilk
  • 2 Tbsp sugar
  • 1/4 cup vegetable oil

Step 1

If you grind your own grain:

Place whole-wheat berries (whole-grain wheat, oats, corn, and rice) in the dry-blade container, secure lid, and select Variable 1. Turn machine on and increase speed to Variable 10, then to high. Blend for 1-1/2–2 minutes until finely ground.

Add all-purpose flour, baking powder, and sugar and pulse once or twice to combine. Increase speed to Variable 10, then to high, and blend until hole forms in center of container.

While machine is running, remove the lid plug. Add the eggs one at a time, then slowly add the buttermilk and oil. Blend until the batter is evenly moistened. If batter does not mix completely, turn machine off and remove lid. Using a spatula, mix ingredients until all dry ingredients are incorporated into the wet mixture.

Follow directions for making waffles using a waffle iron. Serve with Mixed-Berry Sauce or maple syrup.
