Ingredients
- 1 can (8 oz.) crushed pineapple
- 1 can (14 oz.) sweetened condensed milk
- 1 bag (7 oz.) flaked coconut
- 1 bag (2 1/2 oz.) almonds, toasted, chopped
- 1/2 cup melted butter
- 1 tsp. grated lemon rind
- 1/4 tsp. almond extract
- 1 cup all-purpose flour
- 1 tsp. baking powder

Step 1
Drain pineapple well, pressing out excess juice with the back of a spoon. Combine pineapple with milk, coconut, nuts, butter, lemon rind and almond extract, blending gently but well. Combine flour with baking powder until well mixed.
Beat flour into pineapple mixture until blended. Spoon by heaping tablespoonfuls 1 inch apart onto a greased cookie sheet.
Bake at 350 deg. for 13 - 15 minutes. Remove to a rack and cool. Store in a loosely covered container in refrigerator.
