Ingredients

  • For the Cakes:
  • 1 cup flour
  • 1 tablespoon cornstarch
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 egg yolks
  • 1/3 cup water
  • 1/2 teaspoon vanilla
  • 1/4 cup butter, melted
  • 3/4 cup sugar
  • 3 egg whites, beaten for 4 to 5 minutes until stiff
  • For the Filling:
  • 6 tablespoons butter, softened
  • 1 1/2 cups powdered sugar
  • 1 1/2 cups marshmallow fluff
  • 1 tablespoon milk

Step 1

Preheat oven to 350 degrees F. Grease single-use molds (see note below) or specialty canoe pan with nonstick spray. If using single-use molds, place on baking sheet. Set aside.
For the Cakes:
Whisk together flour, cornstarch, baking powder and salt in a large bowl until well combined. Add yolks, water, vanilla, melted butter and sugar and mix at low speed until smooth. Gently fold in stiffly beaten egg whites, 1/3 at a time just until blended. Fill molds about 2/3 full and bake for 12 to 15 minutes until cakes spring back to touch and a toothpick inserted in the center comes out clean. Allow cakes to cool for at least 5 minutes before unmolding. Cool completely.
For the Filling:
Beat together butter, sugar and fluff until smooth and creamy, adding milk a teaspoon at a time until you reach desired consistency. Fill piping bag fitted with small round tip with filling. Using toothpick or chopstick, make 3 small holes and additional space for filling along bottom of each cake. Holding cake in palm, insert tip half way into bottom of cake at each hole and gently squeeze until you feel cake expanding, being careful not to split cake. Repeat to fill all cakes. Enjoy cakes soon after filling.
* Equipment Note: To make your own single-use molds using a 12-inch roll of aluminum foil, tear off a 6 1/2 to 7-inch piece and fold in thirds. Wrap the 6 1/2 x 4-inch piece around a standard 4-inch tall spice bottle (1.75-inch diameter), folding the ends around the top and bottom of the bottle. Remove bottle and press edges with fingers a bit to resemble rounded Twinkie shape. Repeat process to create 8 molds in total.
