Ingredients
- 1 tbs butter
- 2 tbs olive oil
- 2 shallots, finely chopped
- 1 butternut squash, peeled, seeded and cubed
- 16 sage leaves
- 1 batch prepared pizza dough
- 1 1/2 cups thick homemade or bottled tomato sauce
- 4 oz mozzarella cheese, sliced
- 4 oz firm goat cheese
- Salt and Pepper
Preparation
Step 1
1. Preheat oven to 400 degrees. Oil four baking sheets. Put the butter and oil in a roasting pan and heat in the oven for a few min. Add the shallots, squash and half of the sage leaves. Toss to coat. Roast for 15-20 min, until tender, turning the mixture several times.
2. Raise the oven temp to 425 degrees. Divide the pizza dough into four equal pieces and roll out each piece on a lightly floured surface to a 10inch round.
3. Transfer each round to a baking sheet and spread the tomato sauce, leaving a 1/2 inch border all around. Spoon the squash and shallot mixture on top.
4. Arrange the slices for mozzarella on the squash mix and crumble the goat cheese on top. Sprinkle the remaining sage leaves over that and season with plenty of salt and pepper. Bake for 15-20 min until cheese has melted and the crust on each pizza is golden.
