Ingredients
- 4 orange roughy fillets, ½" thick
- 4 ozs feta with basil and tomato
- 1/4 cup lowfat sour cream
- 1/4 cup chopped red onion
- 1 clove garlic, minced
- 3 tbsp capers, drained and rinsed
- 2 small plum tomatoes, seeded and chopped
- 2 tsp lemon zest
- 1 tsp oregano
- 1/2 tsp pepper
- 1/2 tsp kosher salt
- 1 tsp white wine (1 to 2)

Step 1
1. Heat oven to 400. Line baking sheet with foil. Spray.
2. Season fish on both sides.
3. Combine feta-oregano. Add wine.
4. Place fish on baking sheet, spread cheese on top. Bake until just cooked through, 10-12 mins.
We put the fish in the oven while still semi-frozen; it was tough, and we're assuming this was the reason. But the topping was great! Used regular feta, added some basil, white onion, no capers, canned chopped tomatoes, a bit of lemon juice instead of zest.
