Ingredients
- 1/3 cup rice
- 1 1/3 cups water
- 1/4 cup currants
- 1/4 tsp. salt
- 1/3 cup granulated sugar
- 1 1/2 cups scalded milk
- 2 eggs, beaten
- 1 tsp. vanilla
- 1 tsp. flour

Preparation
Step 1
Simmer rice, water, currants and salt (covered) until water is gone - 25 minutes. Add eggs, sugar, vanilla and flour to scalded milk. Stir into cooked rice and pour into greased baking dish.
Bake approximately 35 minutes at 375 deg. Stir after 20 minutes and after 30 minutes. Pudding is done when knife comes out fairly clean when tested in the centre.
