Pre-heat oven to 450. On a raised rack, place the rib roast in the center of a shallow cooking pan and place in the middle of oven. Pre-cook the rib roast for 20 minutes to sear the outside and lock in the flavor. Lower the oven temperature to 250 and continue to cook until the preferred inter meat temperature is obtained.

The average cooking time will run 25-30 minutes per pound. Meat continues to cook after removal from oven. Pull roast out of the oven 5-10 degrees below desired temperature. Let stand 10 minutes. carve and enjoy.

135-140 Rare
140-150 Medium Rare
150-160 Medium
160-170 Well
