Ingredients
- 1 TBS oil
- 1/2 cup chopped onion
- 1 jalapeno pepper, minced
- 1 garlic clove, minced (1 tsp)
- 1 lb boneless, skinless chicken breasts, 1/2" cubes
- 1/2 TBS chili powder
- 1 tsp cumin
- 1/2 tsp dried oregano leaves
- 1/4 tsp pepper
- 1 medium zucchini, cut in half lengthwise, sliced
- 1/4 cup chili sauce
- 1 28 oz can crushed tomatoes w/ added puree
- 1 15 oz can spicy chili beans
- 1 15 oz can black beans, rinsed and drained
- 1 11 oz can Mexican corn

Step 1
1. Heat oil in Dutch oven over medium-high heat until hot. Add onions, jalapeno, garlic, chicken, chili powder, cumin, oregano and pepper. Cook and stir until chicken is no longer pink. Add remaining ingredients. Bring to a boil. Reduce heat to low; cover and simmer 30 to 45" to blend flavors, stirring occasionally.
