homemade banana cream pie (good, custard good)

use eggbeaters pie crust. Remember when blind baking crust to put aluminum foil or parchment right up the sides so the crust doesn't fall down. Then put weights. Bake 425 deg for 15min take out and remove parchment and weights and then bake again for 7 min or more to cook centre.

Ingredients
- 5 tablespoons cornstarch
- 1 cup sugar
- 1/4 tsp. salt
- 2.5 cups milk
- 3/4 cup half-and-half cream
- 3 egg yolks
- 2 tablespoons butter
- 1 tsp vanilla
- 1 cup whipping cream
- baked 9-inch pie shell
- 2 bananas

mix cornstarch, sugar & salt in a 3-quart saucepan. add milk & cream and cook over medium heat until smooth and thick, stirring constantly. pour small amount of hot mixture into egg yolks; blend thoroughly, then pour back into saucepan. cook another 2-3 minutes. remove from heat and add butter and vanilla. slice two bananas into pie shell. pour the filling over the bananas, and chill 3-4 hours. when ready to serve, whip cream and spread over pie.

oh my goodness, then you have to make this!
i have made crust before, but i have found that it’s not a big enough difference to be worth all the effort– so i just get frozen pie crusts at the store! sometimes whole wheat too! xo
