These wonderful Italian cookies are great with coffee, or use them as a base to make Italian-style desserts.

Ingredients
- 1 Tbsp all-purpose flour
- 3/4 cup confectioner's sugar
- 1 1/4 cups (6 1/2 oz) whole lightly toasted blanched almonds
- 3 egg whites
- 1/3 cup superfine sugar
- 1 tsp grated lemon zest
- 1 tsp. almond extract

Step 1
Preheat oven to 275F
Sift the flour and confectioner's sugar together in a large bowl. Put the almonds in a food processor and blend until ground fine. Add them to the flour and sugar.
In a separate bowl, beat the egg whites to soft peaks, and beat in the superfine sugar one-third the amount at a time. Add the lemon zest and almond extract.
Add half of the meringue to the dry ingredients and carefully add the remaining meringue. Using a piping bag and a 1/2 inc nozzle, pipe the mixture into 1 1/2 inc. rounds Bake for 45-50 minutes until dry. If the amaretti start to brown, turn the oven temperature down. Remove from the oven and allow to cool. When completely cool, store in an airtight container for 1-2 weeks.
