SAUCE****Turkey Ragu with Polenta 1 Picture

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon becel buttery or unsalted butter
  • 1 pound ground turkey
  • 1/2 teaspoon approximately each dried thyme, oregano and fennel seed (in place of the poultry seasoning called for in the recipe)
  • Salt and freshly ground black pepper
  • 1 sprig rosemary, finely chopped
  • 1 large clove garlic, finely chopped
  • 1/2 onion, finely chopped
  • 1 leek, quartered and thinly sliced
  • 1/2 small carrot, finely chopped
  • 2 ribs celery from the heart with leafy greens, finely chopped
  • 10 or 12 Cremini mushrooms, roughly chopped
  • 1 fresh bay leaf
  • generous pinch red pepper flakes
  • 2 tablespoons tomato paste
  • 1/4 cup red wine
  • 3/4 - 1 cup chicken stock
  • 1 can fire-roasted tomatoes

Step 1

In a heavy deep skillet heat oil and butter over medium-high to high heat, add meat, season with herbs and salt and pepper, brown the meat and crumble, 7 to 8 minutes. Add rosemary, garlic, onions, carrots, celery, leek, mushrooms and bay leaf and cook to soften 7 to 8 minutes more. Stir in tomato paste 1 minute then red wine, stir a minute more, add stock and tomatoes and break up tomatoes with a spoon. Adjust seasonings, reduce at medium heat, uncovered, for 12 to 15 minutes (this is long enough) and set aside to cool. Divide into two portions and freeze one. Each portion makes 3 servings and Dan likes the leftover as a lunch. Reheat gently but thoroughly before serving.

Prepare instant polenta with chicken broth and grated parm or pecorino.

Scoop thickened polenta into shallow bowls and top with ragu. Pass extra cheese at the table.
