Ingredients
- 4 boneless chicken breasts
- 8 oz. jar sliced mushrooms
- 1 med. onion (sliced)
- 8 oz. pkg. Jack cheese (sliced)
- 2 eggs
- 1/4 c. milk
- 1 c. flour
- 1/2 tsp. salt
- 1 tsp. pepper
- 1 tsp. poultry seasoning
- 2 tsp. butter
- 2 oz. vegetable oil

Step 1
Beat eggs. Mix in milk. In separte bowl, mix flour, salt, pepper and poutlry seasoning. Dip chicken breasts in egg wash, then into flour. Shake off excess flour and repeat. Fry over medium heat until golden brown (about 20 minutes). Meanwhile, saute mushrooms and onions in butter. When chicken is done, spread mushrooms and onions on top and cover with cheese. Place in oven for 2 minutes (just to melt cheese) and serve.
