Ingredients
- 1 pound turkey kielbasa, sliced
- 1 cup chopped red onion
- 3 tablespoons spicy brown mustard
- 2 tablespoons white wine vinegar
- 6 cups low sodium chicken broth
- 2 pounds red skinned potatoes, cut into 1/2-inch slices
- 4 cups coleslaw mix
- Salt and pepper, to taste
- 1/3 cup chopped parsley

Preparation
Step 1
In a large saucepan, cook the kielbasa and onion over medium heat until onion is tender, about 10 minutes. Stir in mustard and vinegar then add chicken broth, potatoes and coleslaw mix; season with salt and pepper. Bring to a boil, then reduce heat and simmer until potatoes are tender, 15 to 20 minutes. Stir in chopped parsley and adjust seasonings before serving.
SERVING SUGGESTION: Serve baked butternut squash on the side. Add some dark rye bread and butter.
VEGETARIAN: Use soy sausage and use vegetable broth.
KOSHER: No changes necessary.
