Crawfish Fettucini

Ingredients
- 2 onions, chopped
- 2 stalks celery
- 1 large bell pepper
- 2 cloves garlic
- 2 sticks margarine
- 4 T flour
- 3 T parsley
- 2 lb. crawfish
- 1 pt half and half
- 1 lb. Velveeta chese
- 2 jalepeno peppers
- 1 12 oz fettucini
- parmesan cheese

Preparation
Step 1
Saute onion, celery, bell pepper and garlic in margarine for 15-20 minutes. Cover and stir occasionally. Add flour and cook 10 minutes on low heat, stiring frequently. Add crawfish, cook 10 minutes on medium heat. Slowly add half and half. Add cheese. Add peppers. Cook for 20 minutes over low fire. Season to taste. Cook fettucini noodles while crawfish is cooking. Add noodles to crawfish. Pour into greased casserole dishes. Bake at 350 degrees for 30-45 minutes.
