  • 2 large chickens
  • 3 large spoons of oil
  • 3 heaping spoons of flour
  • 3 large onions
  • 1 large bell pepper
  • 1 large pod garlic
  • parsley
  • seasoning
  • 6 sticks pie dough
  • 3 pie pans

Step 1

Boil chicken for about one hour. Remove chickens from broth. Strain broth into large bowl. When broth is cooled, place in refrigerator. Debone chicken, cutting into small pieces. Next day, Make roux. Place 3 spoons oil or the chicken fat which has collected on top of the broth into a large pot. Heat. Add flour, stirring until dark brown. Add onions, pepper and garlic. Cook until tender. Gradually add the broth while stirring. Cover and simmer one hour. Add chicken and seasoning. Simmer 1-2 hours or until chicken is stringy. Add parsley 15 minutes before done. Cool. Prepare into pie pans.

Bake frozen pie @ 425 degrees for 45-60 minutes.
