Ingredients
- Nonstick veggie oil spray
- 4 c. old fashioned oats
- 1 c. sliced almonds (I use slivered)
- 1/2 c. packed golden brown sugar (I use a little less, as this is pretty sweet)
- 1/4 tsp salt
- 1/8 tsp. ground cinnamon (I also throw in some nutmeg)
- 1/3 c. veggie oil
- 1/4 c. honey
- 2 Tbsp. sugar
- 4 tsp vanilla
- Raisin or dried cranberries (I add those, not in recipe)

Step 1
Position rack in middle of oven and pre-heat to 300. Lightly spray large rimmed baking sheet with nonstick spray. Mix next 5 ingredients in large bowl. Combine oil honey and sugar in small saucepan; bring to simmer over med. heat. Remove from heat, stir in vanilla (mixture will foam up). Pour hot liquid over oat mixture and stir well. Then toss mixture with hands until well combined.
Spread on baking sheet and bake until golden brown, about 30 minutes, stirring occasionally. I add raisins and/or dried cranberries the last 10 minutes or so. Transfer to rack and cool completely.
Can be made 2 weeks ahead and stored in airtight container.
