Ingredients
- 1 tablespoon olive oil
- 2 teaspoons curry powder
- 1 (13.5-oz.) can coconut milk
- 1 pound boneless skinless chicken breast meat, cut into thin strips
- 2 teaspoons five-spice powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Water/oil mixture
- 2 cups cooked brown rice

Preparation
Step 1
In a small saucepan, heat the oil over medium heat; stir in curry powder and cook for 1 minute; add coconut milk and cook until reduced by half, about 7 minutes. In a large bowl, toss together chicken, five-spice powder, salt and pepper. Heat a large skillet coated with water/oil mixture over medium-high heat; add chicken and stir-fry until just cooked through, about 6 minutes. Stir in coconut-curry sauce. Serve over hot rice.
SERVING SUGGESTION: Serve steamed broccoli spears on the side.
