Ingredients
- 4 portobello mushrooms, medium
- 1 tablespoon garlic, chopped
- 2 tablespoons shallot, chopped
- 4 tablespoons olive oil
- salt and pepper
- 4 7-oz halibut fillets
- 4 teaspoons black truffle oil
- parsley, chopped (for garnish)
- 4 servings mashed potatoes
Preparation
Step 1
Make a marinade combining 3 tablespoons olive oil, shallot, garlic and salt and pepper to taste. Remove stems from mushrooms and place caps in marinade; set aside for 20 minutes.
When finished marinating, roast the mushrooms in a 450 degree over for 8 minutes or until the mushrooms are soft.
While the mushrooms are roasting, saute the halibut. Place an 8-inch saute pan on a medium-high heat, add 1 tablespoon olive oil, and saute the seasoned fillets until golden brown on one side; turn and repeat the process until the fillets are cooked to medium doneness; remove from pan and hold on a warm plate.
To assemble the dish, place a portion of your favorite mashed potatoes in the center of the plate, top with the roasted mushroom and place the halibut atop the mushroom. Drizzle each fillet with 1 teaspoon of truffle oil and garnish with parsley.
