  • 1 Granny Smith apple, peeled and cut into large chunks
  • 1/2 cup large-diced onion
  • 2 cloves garlic
  • 1 (1"x 2") chunk fresh ginger, peeled
  • 1 Tbsp olive oil
  • 1-1/2 tsp salt, divided
  • 1/2 cup orange juice
  • 1-1/4 cups vegetable stock
  • 1 (15-oz) can coconut milk
  • 3/4 tsp curry powder
  • Pomegranate seeds and cilantro, for garnish (optional)

Preheat oven to 400°F.

In a large mixing bowl, toss together the carrot, apple, onion, garlic, ginger, olive oil, and 1 tsp salt. Then, lay out the vegetables on a sheet pan and roast in the oven for 20–25 minutes, until the carrots are fork-tender.

Add the orange juice, vegetable stock, coconut milk, 1/2 tsp salt, and curry powder to a Vitamix blender. Carefully add the roasted vegetables on top of the liquid in the Vitamix blender. Starting at a low speed, start blending the soup, gradually working up to high speed. Blend for 3–5 minutes, until the soup is completely blended and hot.

Serve the soup hot. Garnish with the pomegranate seeds and cilantro, if desired.
